Ingredients

  • 1 cup coconut milk
  • 1 to 2 tsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1 tbsp finely shredded unsweetened coconut
  • small pinch cinnamon
  • tiny pinch salt

Instructions

  1. Place the shredded coconut in a dry pan over low heat.
  2. Stir for 1 to 2 minutes until the coconut is lightly toasted and fragrant, then remove from the heat.
  3. Pour the coconut milk into a small saucepan and warm it over low heat. Do not let it boil.
  4. Add the honey or maple syrup, vanilla extract, cinnamon, and salt. Whisk until well combined.
  5. Stir in the toasted coconut.
  6. Let the mixture steep for 2 to 3 minutes so the flavor develops.
  7. Strain into a mug for a smoother drink, or leave it unstrained for more texture and serve hot.
